Theodora Ego Obi is a senior lecturer at Igbinedion University Okada, Edo State, Nigeria. She holds a BSc degree in Food Science and Technology, MSc and PhD in Food Quality Control and Assurance from Federal University of Agriculture Abeokuta, Ogun State, Nigeria. She has research interests on novel foods and organic foods. Hence her MSc research focused on Probiotic Yoghurt and PhD research on noodles produced from unripe organic plantain flour. She has a number of articles in reputable scholarly international and local journals.
